    Wash and dry all produce. Adjust the rack to about 8 inches from the flame and preheat the broiler to high. Halve, peel, and thinly slice yellow onion . Quarter heirloom grape tomatoes . Cut lime into wedges. Thinly slice scallions . Trim the root end from red cabbage , then slice leaves into thin shreds.

    In a small bowl, combine sour cream , southwest spice blend , and a squeeze or two of lime . Season with salt and pepper. Set aside.

    Heat a drizzle of vegetable oil in a large ovenproof pan over medium-high heat. Add yellow onion and cook, tossing occasionally, until softened, ⏱️ 4-5 minutes . Season with salt and pepper . Add taco seasoning and tomato paste to the pan. Stir until well combined and fragrant, about ⏱️ 1 minute .

    Add ground beef to the pan, breaking the meat into pieces. Cook, tossing occasionally, until browned, ⏱️ 4-5 minutes . Season generously with salt and pepper . Stir in water , then sprinkle cheddar cheese over the top. Transfer the pan to the broiler and cook until the cheese is melted and bubbling, about ⏱️ 3 minutes . Sprinkle with scallions .

    While everything boils under the broiler, wrap flour tortillas in a damp paper towel. Microwave on high until warmed and soft, about ⏱️ 30 seconds .
